Simple, Healthy and Delicious

Asparagus is deliciously in season right now.  Oh how I love those slim, tender shoots.  When they are in season, I tend to put them on everything.  Today, I created a simple and easy lunch and I wanted to share it with you.

Steam a bit of asparagus for 5 minutes (I break mine up into bite sized pieces before steaming).  While that is going, 'bake' a medium potato in the microwave.  Chop up a bit of smoked turkey breast.  Melt a couple tbsp of butter with a couple tablespoons of lemon juice.

When the potato is done, open it up.  Pour the asparagus over it, top with the diced turkey and finish by drizzling the butter/lemon juice mixture over the top.  Finally, sprinkle with coarsely ground sea salt.  Delish!

  2. Yum! We never get very good asparagus where I am but my nana had a huge asparagus bed and we used to eat it every meal when it was in season when I was younger. Thanks for reminding me of a very happy time.

  6. The kits are gorgeous and I LOVE asparagus. My son scoots the dish next to his plate at dinnertime and tries to sneak it all! lol

  7. i try and try and try to like asparagus, but it always seems a bit tough and stringy to me... my mom is always cooking it but i'm wondering if she's doing it wrong...

Jessica, when you get fresh asparagus, you must rinse it, then hold it at either end and then bend it in the middle, letting it break on it's own. use the end with the tip, the rest will be stringy and tough. My MIL uses more of it then is recommended as well and the result is the same as you describe. It's still edible, just not enjoyable. If you're thrify, you're likely to thrift people away from eathing it, LOL.

    3. ha! that's exactly what my mom does wrong. i've told her to use the method you suggested and she said it was "wasteful"...lol. i think i'll buy some myself and use it the way you suggested :-)
