Delicious and Easy

Now how do you beat a combination like that?  I'm pretty sure it's not possible.

So here is a very quick and super easy little recipe that I learned way back in high school 'Foods' class that has served me for many years.

You can tweak it by adding your favorite pizza toppings, perhaps olives, mushrooms or jalapenos.  Make it a bit more saucy by adding a little liquid (my favorite is a a bit of burgundy wine!).  However you do choose to make it, these little cups will please most anyone you are trying to feed so have at it.



Super Easy Pizza Cups

3/4 lb Ground Beef
6 oz tomato paste
1 tbsp dried onion (or 1/3 cup diced onion)
1 tsp Italian Seasoning
1 tsp sugar
1/2 tsp salt
1 can refrigerator biscuits
3/4 cup shredded mozzerella

Directions

Preheat over to 400°

Brown and drain ground beef with the onion.  Stir in paste and seasonings.  Cook over medium heat 5 minutes (may need to add a few tablespoons of water if mixture seems to stick together too much) (this is also the point at which you would add any extra 'toppings' you'd like to)

Flatten each biscuit in your hands and place in muffin tin cups.  Create a cup for the meat mixture to sit inside of. Place 1/4 cup of meat mixture into each cup.  Sprinkle generously with cheese.  Bake at 400° degrees for 12 minutes!

Voila!

And I'll tell you a secret, I always make a double batch because leftovers are never a bad thing!

  5. Sasha - refrigerator biscuits come in a little snap open tube in the cold case at the grocery store. Pillsbury makes them, and store brands are just as good. I hope you're able to find them!!
